Meal Planning W/Breakfast Banana Splits


Healthy Meal Planning

One of the best decisions I made to conquer our family schedule was to start meal planning. I got so tired of coming home and staring into the fridge wondering what to make. I also hated the idea of my kids constantly asking for cereal for breakfast. This year I made a promise to myself to make more breakfast recipes that everyone would like.

Usually on Sunday, we sit down as a family and I write out our weekly schedule. Practices, school events, book signings and days that Daddy is at the fire station all go onto a chalkboard above our kitchen table. From there, I know which days will require pre-cooked meals, cereal and our one weekly dinner out.

From there, I add some of my favorite recipes for breakfasts and dinner.

Which is why I love Hiland Dairy’s newest meal planning tool, which helps make sure my weekly meal planning is balanced, rounded meal plan. You can find out more about it here.

Breakfast Banana Splits

Ingredients:

(This is for one serving. If you want to make more for everyone, just double or triple the recipe)

1 banana

1/2 cup fat free cottage cheese

2 tbs. honey

1/2 tsp. vanilla

additional ingredients:

-nutmeg, cinnamon or greek yogurt.

Toppings:

-flax seed

-fresh fruit

-chocolate syrup

-coconut chips. If you haven’t tried these yet, you can find them online or at your local health food store. They are dried coconut pieces and come in a variety of flavors. I found some chocolate and sea salt flavored ones and I may or may not have eaten the entire opened bag after making this recipe.

Directions:

I had some help for this recipe, which is always a combination of challenging and fun watching them learn to do something in the kitchen.

-Split the banana lengthwise & set aside.

-Add cottage cheese, honey and vanilla. Pulse until smooth.

-spread cottage cheese mixture in between split banana pieces.

-top with fresh fruit, flax seeds, coconut chips and/or chocolate syrup.

-Serve and enjoy a delicious and healthy breakfast.

-add recipe to meal planning for next week.
