Pineapple Mint Smoothie

You all know my issues with breakfast. I am always looking for new ways to This Pineapple Mint Smoothie is the perfect way to start your day. Super refreshing and flavorful and it’s super packed with nutrients.

Part of my New Years Resolution continues to be making healthy and delicious breakfast options that my kids and myself will enjoy. Part of conquering my goal this year is training for a half marathon with the 12yr. old.

It can be really tempting to put off my goals since the race is not until June, but every time I run, I am reminded I am still out of shape. Then, when I see my daughter doing her training, I think I will finish last during the race. (In truth, I may do this on purpose anyway. The race take place at Grand Teton National Park and all that scenery may make me stop and stare!).

Smoothies and creative smoothie bowl recipes are all the rage on the internet right now and they are also making their way into our kitchen. First, this is really easy to make and incredibly quick! And when I say incredibly quick I actually mean the 2 minutes, push a button kind of quick which is a busy mom blessing.

This is also really filling and will keep you full for hours which is another thing that I really like and that most smoothies fail at providing.

And finally, it’s the flavor factor. O M G can we talk about the flavor for a hot second? Becuase it’s honestly the main thing that keeps me making this again and again. Seriously, go big on the mint. Go big big big on it because it makes all the difference.DSC_0958-3

It’s what gives that fresh healthy boost that’s so delicious and combined with the pineapple they are a match made in heaven. This pineapple mint smoothie is definitely not your usual one but it’s about to become a staple in your home, you can trust me on that one.

Ingredients

1 Cup frozen pineapple chunks

1 Green apple, peeled and cored

1 ½ Cups milk

½ Cup greek yogurt

¼ Cup mint leaves

2 Tbsps agave

2 Cups ice

Directions

Cut the apple into bite size pieces and place in a blender.

Add pineapple, milk, yogurt, mint leaves, agave, and ice.

Blend on high speed until smooth.

Pour into tall glasses.

Decorate with some mint leaves and add a colorful paper straw.

Serve and enjoy.

In a Hurry? Don’t let it keep you from a great breakfast.
